Hudson Valley Sausage Company, February’s Client of the Month, makes artisan sausages and a variety of other meats right here in the Hudson Valley. Owned and operated by the Elia Family, they pride themselves on being “Hudson Valley’s premier pork store,” creating quality products that are handmade using only the finest local and regional meats.
Hudson Valley Sausage Company, which started as Elia’s Meat Market, was founded by Mark and Toni Elia in 2002, but sausage making has been Mark’s passion since he was a young boy working at a local butcher shop. The day to day operations of the family-owned company are run by the couple’s daughter, Adrienne, who the couple hopes will take over the store in the next five years.
The company has their very own USDA processing facility located at 16 Commercial Avenue in Highland, NY, where they only sell meat products that come from humanely raised and harvested animals. If you stop by (open Fridays from 12pm-6pm and Saturdays 9am-5pm), you’ll find an assortment of sausages and cured meats available, including coppa, bresaola, soppressata, and salamis. Hudson Valley Sausage Company’s products can also be found at Adams Fairacre Farms in Kingston, Poughkeepsie, and Wappingers, Foodtown grocery stores in Croton-On-Hudson and Cold Spring, and Freshtown grocery stores in Amenia and Margaretville.
In addition, Hudson Valley Sausage Company offers catering for all occasions and sausage making classes. You can also sign up for a “meat of the month” package, in which you’ll get an assortment of meats delivered to you every month for one set price. Hudson Valley Sausage Company has been insured by Ryan & Ryan Insurance Brokers for more than two years. When asked why they chose R&R as their insurance agency, Mark responded by stating:
